Summer Wild Blueberry Pops

Cool Off

There’s no more classic summertime treat than frozen popsicles. Kids and adults love them as a way to cool off in the summer. We’ve been feeling the summertime heat, so we thought we’d share one of our favourite recipes. It’s super easy and can be ready overnight. This recipe avoids any excess sugar from other frozen treats, so you can feel good about having them over and over again. (And over, and over again if it’s still really hot out!)

 

Ingredients

  • 1 can of coconut milk

  • 1 cup unsweetened or Greek yogurt

  • 1 teaspoon vanilla extract

  • 1/2 to 1 full cup of Healthy Berries Superfruit Wild Blueberry Purée

    YOU WILL ALSO NEED

  • Popsicle mould or ice cube tray

  • Popsicle sticks or skewers (careful with the pointed ends!)

The Steps

  1. Put all ingredients in a blender or food processor and blend until combined.

  2. Add mixture to moulds of choice and set in freezer for 1 hour.

  3. Once it had frozen slightly, add Popsicle sticks to the moulds, and let freeze completely.

  4. When fully frozen, serve and enjoy!

Pro Tips

If you’re using a larger mould like us, you can add fresh fruit to the mixture after it’s been blended. To add extra flavour, try adding a banana to the blending process!
