Wild Blueberry BBQ Chicken Wings

 

We’ve got a tasty meal idea for you today from Forkurdiet using our Wild Blueberry Superfruit Purée. The recipe calls for an oven, but you can make these wings on the BBQ too. After all, barbecue season hasn’t quite ended yet! Wings make a great addition to cook-outs or potlucks. In this case, the sweet and tartness of the wild blueberry puree plays great together with traditional BBQ flavours. Give these a try at your next back-yard dinner or patio night. INGREDIENTS

- 1½ cup Wild Blueberry Superfruit Purée

- 1 cup ketchup

- ½ cup brown sugar

- ½ cup apple cider vinegar

- ½ cup bourbon

- 1 small red onion, diced

- 2 cloves garlic, minced

- 1 jalapeño, diced

- 1 teaspoon kosher salt

- ½ teaspoon black pepper

- 1 teaspoon crushed red pepper

- 1 tablespoon oil (I used EVOO)

- 1 dozen chicken wings

 

INSTRUCTIONS

1. Preheat oven to 400 °F

2. Place wings on lined baking sheet and spread them out in a single layer. Sprinkle a pinch of salt and pepper over the wings

3. Bake for 25 minutes or until golden brown, flipping halfway through

4. While wings are in the oven, prepare the Blueberry BBQ sauce

5. Heat oil over medium heat and sauté onions and garlic until translucent and fragrant

6. Combine everything in a large pot and cook down for approximately 25 minutes (or until the liquid turns syrup-like)

7. Carefully remove wings from oven and transfer the wings into a mixing bowl, pour the Blueberry BBQ sauce and mix well

8. Transfer wings back onto the baking sheet and place into the oven for 10 more minutes, flipping halfway through

9. Remove from oven and serve hot
