Balance to Bliss Blueberry Glazed Salmon
This recipe is an absolute must for barbecue lovers, or seafood lovers. Although you could use an air fryer as done by Balance to Bliss, or a pan, a plank on the BBQ is a surefire success. (Get it? because there’s fire in a barbecue?). Cooking puns aside, this is a delicious summer time recipe. Anytime you can find salmon on sale, it’s worth giving a try for that delicious sweet and savoury combination.
1 to 3 pounds skin-on salmon fillets (8 ounces per person)
½ cup Wild Blueberry Superfruit Puree
1 tsp. Lemon juice
1 tsp. Sugar
Salt and Pepper to taste
1 Tbsp. Corn Starch with 1 Tbsp. Water
Cook your salmon for about 8-10 minutes
While your salmon is cooking, mix the Wild Blueberry Superfruit Puree, lemon juice, sugar, salt and pepper in a small saucepan. Bring to a boil.
Remove from heat and add your corn starch and water mixture. Mix til the glaze begins to thicken.
Use a spoon to spread approximately 1-2 Tbsps of glaze to the top of each salmon piece.
Place in the oven for 2-3 minutes.
** I used any leftover glaze as a dipping sauce on the side.
