Creamy Superfruit Salad

Our month of Dany Duguay continues. If you were a little apprehensive of baking, this should be a welcome change! Fresh, colourful, customizable and full of nutrients and antioxidants, this fruit salad has got it going on. Use any fruit you love and try mixing it up!

Serves 4-6 

Ingredients: 

1 cup pineapple, peeled, cored and diced 
1 kiwi, peeled and diced 
1 cup red or black grapes, halved 
1 cup green grapes, halved 
1/2 cup blackberries, halved 
1/2 cup strawberries, halved and sliced 
1/4 cup gooseberries, hulled and halved 
1 banana, peeled and thinly sliced 
1 cup blueberries 
Juice of half a lemon 

For dressing: 

1/3 cup Superfruit Purée 
2 heaping Tbsps vanilla yogurt 

In a large bowl, toss fruit together with lemon juice. In a separate small bowl, whisk together dressing. Drizzle over fruit and toss to combine. Keeps up to 2 days, refrigerated.
