Wild Blueberry Granola Parfaits

Looking for a breakfast packed full of protein, fibre, antioxidants and flavour? Chef Dany Duguay says “Look no further”. These parfaits combine Greek yogurt, Superfruit Purée and fresh granola using Made with Local Original Goodness bar mix. Prep on Sunday and layer when ready to consume during the week. Granola makes approx 6 parfaits 

Recipe serves 2 

Ingredients: 

For Parfaits: 

1 cup vanilla Greek yogurt 
1 cup fresh blueberries 
1 cup Superfruit Purée 
1 cup granola (recipe below) 
Mint for garnish, optional 

In two parfait glasses or your favourite cup, layer ingredients starting with yogurt, then blueberries, then puree and top with granola, extra blueberries and garnish with mint. Can layer up to 12 hours before consuming, refrigerate until ready to consume. 

For granola:

1 bag Made with Local Original Goodness Bar Mix 
3 Tbsp ground flax seed 
1/2 cup unsweetened shredded coconut 
1/3 cup pure maple syrup 
1/3 cup coconut oil, melted 
2 egg whites 
1 tsp vanilla 
Salt to taste


DIRECTIONS

• Preheat oven to 300’f.
• In a  large bowl toss together the next bar mix, flax seed and coconut.
• In a separate medium bowl, whisk together remaining ingredients.
• Combine wet and dry ingredients in large bowl. Place mixture on to a parchment lined sheet, form a wreath shape with a hole in centre and pat down gently until even. DO NOT STIR while baking.

• Bake for 15 minutes, rotate pan, bake an additional 15 minutes.
• Turn off oven. Leave for 10 minutes.
• Open oven door slightly. Allow to cool for 15 minutes like this. Cool completely. Store in an airtight container for up to 1 month. Freezes well.
